Oil Spraying Out of Dipstick

Short answer: Oil thrown out of the dipstick tube at high rpm is usually either excessive blow-by (worn or broken rings — run a compression test before tearing into it) or a blocked crankcase vent. First make sure there’s a clean, unblocked breather on a valve cover (or a working PCV) — a capped-off cover builds back-pressure that pushes oil out the dipstick.
