It's ok to use jack stands under the axle and A arms. You don't want to leave the wheels 'hanging', or as you put it, stretched.
The pie tin is a good idea. I keep moth balls at the garage door and other ports of entry. I also put them around the bottom of the jack stands. Remember, a mouse can gain access thru a hole the size of a nickel. The best deterrent for mice I've found are my cats.
Once the car is ready for its winter nap, change the oil and filter. I also like to change the coolant every other year. Lube all the grease-able joints. Top off all fluids. Clean the exterior and vacuum and treat the vinyl surfaces, and if you have a cover, put'er to bed.
This way when spring rolls around all you have to do is pull the cover off, check things over, and you’re good to go.
