Date code is on the headrest shaft. Just pull them out. My Nov 68 built has codes stamped in the straight shafts.
We compared a bunch of Lordstown birds built October-December 1968 and found that the December cars have the angled headrests and the pre-December have the straight headrests. Dash balls (horizontal vs. cross) changed over late October or early November.
