smokediver, With the '68 convertible 554 option custom interior, the dash pad is a dark red/ burgundy matching the zero-gloss burgundy upper dash (speaker area). Also on mine the original dash pad, door lock pulls, window cranks, sun visors, floor mats, dash assist handle and maybe a few other things are that same burgundy. It has been 20+ years since I replaced carpet but if I recall, the original may have been somewhat darker than the stuff I put in. You can see some contrast with the door panel carpet in the picture below. I've been considering a second replacement because the current stuff is getting a light orange tint as it fades in the sun.
