I have never looked into it but we could check the internet for when the laws were coming effect for these things which would have forced them to start punching them out and offering them in the cars. Wouldn't that give some insight into when the headrests were there?

ETA: My car is a Oct 68 build and has headrests. Straight bar. They are listed on the build sheet as an option.
