The 14x7 wheels used 3" deep trim rings, with a sharp shoulder from the dish to outer edge. I have the repro 14x7 trim rings, and they are accurate.
However, with the 15x7 wheels , the factory dish should be 2.50". Looks like you have 2.25" trim rings. I'll bet that they make one generic 15x7 2.25" trim ring that fits 15x5, 15x6, and 15x7. Without the full dish, you lose that "deep dish" look that made the 69 Birds look so aggressive. I did some research a couple years ago, and found that the repro 15x8 Corvette trim rings used a 3" dish. They do not have that "sharp shoulder" from dish to outer edge, but at least they were the correct depth. I bought a set and found that they needed some "finessing" to fit. They were about 1/16" TOO deep, and hit the spokes! I massaged the outer edge to bent the lip down, and now they fit.
