You tested the temp sending unit correctly.
And no, it does not come ON with the key ON. Only the GEN and OIL lamps should come ON with the key ON.

As far as the flicker goes, disconnect the alternator and then start the car up. If the flickering stops, you've found the issue.

The door switch issue, sounds about normal to me - Wouldn't be too concerned with it.
