One way you could do this to get the same effect that they did, is uses your stock headliner. Get the material you want to use (make sure it's thin enough to make it work for sculpting) and get the foam. Cut the shapes as they did, you can use 3M Super Trim Adhesive (not the trim adhesive, but the Super) Spary the back of the foam, and the area it will cover on the headliner. Lay the foam in place, then spray tight around the edges of the foam where the material will have to be sculpted. and then spray the whole headliner area well (should take at least 2 cans) and then lay down your material, tucking it in tight to the sculpted areas. Then instal the headliner just as you would a stock one with the bows for support.
That's what I would do anyway for a custom headliner.
