They help with stability and vibration throughout the body. Many people omit them (or they were already gone when they bought their car)
If having your car judged in a show, you will be marked down for having them missing.
If you have a full or partial set and choose not to install, I am looking for a set if you want to sell them.

There are varying opinions about them, but I have driven with and without them and they do make a difference. Negative: adds about 100lbs to the car, but unless you are building a drag machine it won't make that much of a difference. Search a thread I had with more info about them "cocktail shakers" it shows one disassembled.
I`ve heard people say they make no difference and some that say they do...its probably fairly individual to the car....I would not delete them unless you first drive it with and without to verify...
If you are "restoring" the car you should have the shakers. If your making a driver out of it I would remove them. I removed mine and added subframe connectors amoung other stuff. Your call.

Bottom line is this, if they came on the car from the factory, then they serve a good purpose. Car manufactures will not spend one penny more than they absolutely need too (even back then), so if they thought they were needed, then it's a good bet that they are...

x2 If you are restoring, keep them in. If not, subframe connectors are a better choice. But I wouldn't remove them without connectors.
I had a 68 RS/SS conv. Camaro prior to owning our Bird. It had the cocktail shakers in tact. I then drove a 68 Bird conv that was missing them, I can not say for certain but the car had a very serious vibration at hiway speed. Again, it may have been something else like a bad U-joint but nonetheless the shakers were missing. I have a full set up at my parents house in Buffalo. If I ever speak to them again or go there for some reason I am going to get them and post them on here for someone who needs them...
I have a '68 convertible that is missing the shakers. I've added subframe connectors and rebuilt the suspension (plus front and back sway bars). I don't seem to have any vibration problems at speed, 80mph or so. I agree with Earlybird, however, that the engineers didn't add the shakers without a good reason. I'd like to try them someday and see (when $ are not a problem...)

Waste of money (and weight) in your case. The purpose is to dampen out vibration due to the lack of structure without the roof. The subframe connectors stiffen the structure. Which is why you don't notice a vibration issue.
