Chalk it up to supply and demand. I too would have liked to have found the correct red when I replaced the seatbacks and looked though all the various vendors. I ended up buying plain white thinking the white would be easier to cover with red paint.

NPD http://www.npdlink.com/ (Minor correction: they show the color as ivory, not the plain white I said.) Part number C-11358-3B Page 8 in the Firbird catalog. I paid $80 in 2004. Looks like they are $90 in their catalog today.
The quality was Ok. I don't know if the upholstery guy had any issues or not. I had the buckets done since there was frame and spring repair besides the new foam and covers all involved.

One day they'll have white hinge covers. It's on my list to Santa.
Jim did a great job on the seat backs. I especially like the fact that his fit snugly on the sides against the seat upholstery. Mine don't fit quite as snug.
I may have to buy the white ones and spray them parchment. The black easily comes through where the seat knob rubs against the back when retracting the seat.
