What option included the woodgrain inset on the dash of a '69? Could this be ordered separately, or was it always part of a package?

Also, can '69 standard seats be re-covered with '69 custom seat covers?

The 1969 dash woodgrain was a part of the custom interior, and could not be ordered separately.

I have seen that the the part companies sell different seat foam for the standard and the custom seats, so I guess you must change the foam too if you go from standard to custom seat covers.

Yes, the deluxe covers can be put over std seat foam. They don't look exactly like they are originally supposed to but it can be done.
