I found dyno information that indicates about 300 HP at the rear wheels for my car. With a Muncie M-20 manual transmission, what does that translate to for engine HP?

When I took an automotive engineering class we used to assume 90% for manual cars, 85% for Autos (although that was a long time ago).
So I think you are in the 335 HP range.

I've heard about 15-17% for manuals and around 20-25% for autos. So that would put you in the 345-350 range.
