What are the options. I would like to lower my front seats about an inch. I have bucket seats that were completely redone and now they are too tall. I was told by the shop that did the work that they can't lower them. Are there any bolt in options out there?

New seat buns? Mine are like that too. They do settle a bit after one to two years. I am not aware of any bolt in swaps.
It would probably involve cutting and welding of the tracks.
I used to be indecisive. Now I'm not sure. Maybe I should load the seats up with ready mix when I'm not using the car. Might speed up the sagging.

That probably would help. It's amazing how much even an inch of settlement makes... Just don't get that cement paste all over your interior.

hokie1984: I would think that a thick washer or a few shims would raise the seat an inch.
I won't be using ready mix but maybe a few bowling balls in the winter. Ii seems odd that shorter replacements aren't being made.

I have the same problem, even with my old clapped out seats my hair touched the top, and I'm only six feet tall. I put in some aftermarket seats, they are just as high but I can adjust them further back and recline the seat back for more head clearance. My brother, 6'3", has to have the passenger seat reclined a bit more.

After I put in new seat cushioning and fixed a broken spring mine was uncomfortably high. A combination of smashing down some over time and adding a seat extender to get more room to the wheel makes it comfortable again.

Smaller diameter steering wheel. Same thing I did after installing comfy aftermarket seats.

Brushing my head on the headliner is the biggest problem. I am seriously considering putting in sand bags or cement blocks when not using the car.

For my coupe I replaced the seats with ~74 Firebird buckets. I had to modify the rear mounting but man were they comfy! I made my own extenders and I also put in a small diameter TA steering wheel. So at any rate that made the car comfortable to drive for guys too long in the leg like me.
I don't believe you will much success at lowering your seats with the existing seat mounting hardware.
However, I agree with others that installing the seat extenders and/or a smaller diameter wheel could be enough to make it more comfortable for you.
For the few drives I made with the vert (before tear down) I was able to got in easily because the top was down.
