You asked a lot of questions, and a lot of it really comes down to whether you want a 100% correct clone or to work with what you have.
First off, the interior color choices are blue, parchment or black. Blue dash pad comes with a blue dash face. Parchment with black dash and carpet. Options were custom trim or standard.
Steering wheel: depends on whether you are doing an early or late clone. Woodgrain wheel or Formula style with first gen emblem.
Console: optional, and blue if it was ordered with blue interior, black if with parchment or black.
I have a lot of pics of original T/As but even "original" cars often have reinterpretation over the past 41 years.
