Sounds like your moving in the right direction. Are you trying to get everything completly stock? The temp sensor you could get at a autoparts store but wouldnt be stock style or you could start downloading the catalogs for YearOne, Ames, ClassicIndustries. YearOne is good about showing pictures. I think you covered most of what you need except the TVS and I don't recall if 67s had that.
I can't tell you what the lever under the dash is. You will have to chase the cable to where it goes.
